Why should its presence in milk be tested?
Alkaline phosphatase is an enzyme naturally found in raw milk.
(The heat treatment applied during pasteurization destroys the bacteria in the milk and inactivates the alkaline phosphatase enzyme.)
For this reason, alkaline phosphatase enzyme is used as an indicator to check whether the pasteurization process is successful or not.

The relevant standards are the Raw Milk and Heat Treated Drinking Milk Communiqué of the Turkish Food Codex (notification number: 2000/16,
1402.2000/23964) and the Turkish standard for Pasteurized Milk TS 1019 (January 2002).
Abroad, the relevant legislation is the European Union (91/180/EC).
Accordingly, pasteurized milk should give negative results to the Alkaline
Phosphatase Test.
